Sub Rosa on Hiatus

Sub Rosa is in bread limbo. Unfortunately, it is not currently available at the Byrd House Market.

We are still in the preparation stages for beginning work in the anticipated storefront in Church Hill. Sub Rosa's current baking efforts will go on hiatus during this building phase, but once open we intend to continue offering subscriptions available for pick up at the shop and one other undisclosed location near the Fan throughout the week.

Mid Summer Day's Bread

Sub Rosa celebrated it's 2nd year providing bread to the Richmond community. Below are some pictures from the bread party. Around 90 some naturally leavened, wood fired saj breads were made, some plain and others with toppings. Thank you to all who came and especially to Stu for all of his help.

The Renegade Market has Begun...

The veils between the two worlds wore thin and we felt the cold in our bones on Tuesday as the Byrd House Market transitioned into it's official unofficial market season, the Renegade Market. Sub Rosa and a few other farms will stick it out all winter long with our weekly offerings. Market time for now is 3:00PM-6:00PM. As we near the Winter Solstice the market time will shorten, as darkness comes sooner.

With heavy hearts we announce that Sub Rosa Bread will no longer provide bread for our customers in Northern Virginia and Washington DC. After serious s deliberation, we have made the difficult decision to discontinue subscriptions there and focus our efforts to expand the business in directions that involve less travel.

Sub Rosa meets Farm & Sparrow

We took a trip down to North Carolina primarily to visit with Dave Bauer of Farm & Sparrow, a wood fired baker, and to see his new oven, a beautiful 6x10. Our minds were blown. Much bread was had. We were a little crazy from lack of sleep and are still digesting it all, but if you are down that way make sure you get a chance to eat some of what this man has to offer. It's awesome. Dear People of the Bread

We are sorry to say that our space on the list for May is completely full and thus we cannot offer subscriptions at this time. There is little that is more frustrating to a baker then being unable to provide good bread to those who desire it. We thank you for your interest, patience, and continued support as we attempt to grow to better supply our communities with bread.
We hope we can be your provider, Sub Rosa style, in the near future.

Our bread is hand crafted, naturally leavened, and baked in a wood fired oven. Presently, our bread is only available by monthly subscription:

Sub Rosa 001 is made with unbleached, unbromated flour combined with a portion of whole wheat and rye flours that are grown and stone-ground milled in Virginia. The only other ingredients are filtered water and sea salt. Available as a 3 lbs. or 1.5 lbs. bread.
3 lbs. subscription - $50 dollars per 5 week month
1.5 lbs. subscription - $30 dollars per 5 week month

As a subscriber your bread will be available for pick up every Tuesday in Richmond.

Sub Rosa Bread offers an alternative to the often disappointing bakeries in Virginia. We make bread. Real bread. Good bread. The kind of bread you've tasted when traveling in the old country and wondered why it was so much better than bread in the United States. We want to share this bread with you, that you may share it with others. Our breads are naturally leavened and we strive to use locally grown and milled grain whenever possible. We hand shape each loaf and bake it in a wood fired oven lending to its unique character and quality.

We are not a brick and mortar storefront. Currently, our bread is only available through subscription. Here's how it works:

A month long subscription entitles you to one loaf a week for the period of that month. We will have your bread available for pick up every Tuesday in Richmond at the Byrd House Market.
Prices vary according to which bread is chosen and how many weeks there are in that month.
